But meat prices in Mongolia are among the most volatile of any food commodity anywhere in the world, swinging by 40-60% between summer and winter for the same cut. Understanding when to buy — and how much — is a practical skill that every Mongolian household manages. The seasonal price swings follow a predictable logic rooted in the herding calendar. Autumn — specifically October and November — is the cheapest time to buy meat in Mongolia. This is when herders slaughter animals before winter, flooding the market with fresh meat. Savvy urban Mongolians buy whole carcasses or large cuts in autumn, hang them in unheated storerooms or freeze them, and eat from that supply all winter. This practice — called 'övöljiilt' (wintering) — effectively locks in autumn prices for the coldest months. Families without storage space pay winter market prices, which can be 40-50% higher than autumn lows.

The five meats in this calculator reflect Mongolia's livestock portfolio. Mutton (хонины мах) is the everyday staple — the most consumed, most affordable, and most deeply embedded in Mongolian food culture. Beef (үхрийн мах) is more expensive but increasingly preferred by urban consumers. Horse meat (адууны мах) is culturally significant, traditionally associated with strength and celebration, and has a distinct flavor from a high-fat, high-protein diet. Goat meat (ямааны мах) is leaner and often cheaper. Camel meat (тэмээний мах) is a delicacy of the desert south, rarely found in northern markets.

Price data and seasonality Meat prices are UB retail boneless prices as of January 2025, verified against Data.mn weekly price surveys and UB Post market reports. Seasonal patterns reflect the herding calendar: autumn (Oct-Nov) is cheapest due to pre-winter slaughter; winter (Dec-Feb) is most expensive due to storage and transport costs. Income benchmarks use the NSO average household income of ₮1,800,000/month (2025), not median (NSO does not publish median). Minimum wage reflects the April 2025 increase to ₮792,000. Camel prices are estimates based on relative pricing to beef — no public retail price data exists for camel meat. Countryside prices are typically 15-25% lower for mutton and goat.
